With the start of April comes a big shift for our family. Gone are the cold weeks of being shut in the house, afternoons where I have all the time in the world to prepare dinner and take my time in the kitchen. With April starts taxi mom. With baseball season in full force now, we have 2 boys on the diamond, and this spring Lilly has decided to give volleyball a try. Our family will be criss-crossing down the parkway as we take kids to various games and activities.
When we do get an afternoon and evening at home, the scene at my house is usually a driveway full of kids playing basketball, asking for just the last bit of sunshine to play instead of coming in for dinner and homework.
So what does that mean for meal planning? While I have to plan more than ever, I also have to simplify. Keep it simple. Utilize my slow cooker. If I don’t take these steps, then we fall into the trap. The holy shit it’s 8pm we are just going home, no one has eaten, and there is nothing defrosted at home trap. It happens to all of us. The key is, don’t let it happen 5 times a week. My goal during this hectic time of year it to have a meal cooked at home 4 times a week. We then allow for one night out as a family, one night of on the go chipotle, chick fil a, you know the drill busy mamas…. whichever drive thru is closest on your drive home, and lastly that all amazing yoyo night… otherwise known as leftovers!
